
5 or 6 corn tortillas
5 eggs, beaten
1 1/2 cups shredded cheese
1/3 cup heavy whipping cream
1 cup coarsely chopped fresh spinach
1/2 can chopped green chilies
1/4 cup onion, diced
1/4 cup bell pepper, diced
1 small tomato, diced
Toppings (optional):
sour cream
guacamole
salsa
1. Line a greased skillet or baking dish with corn tortillas.
