OH MY, OH MY! I've found a new favorite cookie. Since I'm a chocoholic, you know these are fabulous if they are my new favorite.
These cookies are embarrassingly easy to make:
1 store bought butter pecan cake mix
2 eggs, slightly beaten
1/3 c. vegetable oil
finely chopped pecans
Pre-heat oven to 350 degrees. In a medium bowl combine cake mix, beaten eggs, and vegetable oil. Use a teaspoon sized scoop to measure out dough. Roll dough into a ball and roll in chopped pecans. Place dough balls on a parchment lined cookie sheet 2 inches apart. Bake at 350 degrees for 10-12 minutes. Cool completely before storing in an airtight container.
Makes 2 dozen

I'm going to add that flavor of cake mix to my pantry shopping list. Sometimes we need a fast dessert, and they sound delicious too

Oh my, indeed! I think I just may happen to have a box of cake mix in the pantry - and 5 pounds of our own pecans in the freezer - so these babies are going to be taken for a test drive right NOW, since it's far too cold to be outside today!

DeleteSince your youngins are taking a 4-H cooking project this year, this may be a cookie recipe they could easily tackle. There are all sorts of variations one can incorporate with this recipe by changing up the flavors of the boxed cake mixes and rolling them in other goodies. For instance:
chocolate cake mix cookie dough rolled in crushed peppermint
yellow cake mix cookie dough rolled in cinnamon sugar
lemon cake mix cookie dough rolled in powdered sugar
confetti cake mix cookie dough rolled in flaked coconut
I think one would only be limited by their imagination.

Hey yeah! Thanks for all of the ideas. Did I tell you that one of them one first place and the other second place in a local bake off?! They were so excited and it was such a fun surprise. They are also learning to make cake pops using a machine. They are going to give them away in the campgrounds but put out a bucket for donations. We are just beginning this experiment. They are hoping to raise money to buy/donate animals through World Vision.
DeleteI remember you mentioning the baking awards in your family Christmas card. I was so proud of them when I read that ... BUT ... not as proud as I am now when reading about their fundraising project to bless others through World Vision. That kind of action is exactly what 4H and our Christian faith fosters. It is so exciting to hear about young people working toward making our world a better place. Please let them know I am very proud of them.
